Endergetic expansion is a good mod to fix this lack of content, same with outer end and better end.
Different island generation, new structures (end ruins, end dungeons) new biomes, new mobs, endium armor that would upgrade from netherite armour, hatchable dragon egg, new end city generation, and the list goes on.
